It’s been way too long since my last post, but with competition dance season and finals in school, I had a lot on my plate. I am excited to be back, and I intend to post weekly during the summer!
To kick off my summer posts, I’m going to recommend some healthy breakfast options for busy summer lifestyles! Breakfast is so important to start your day off right, I think it can be very fun to mix it up and create healthy but amazing breakfasts. The recipes I am going to share with you are protein-filled and have a mix of fresh fruits and veggies, because breakfast is a great way to get your servings of both. These recipes are fast as well, so you can make them ahead of time or in a couple minutes in the morning.
Avocado toast and yogurt parfaits are two pretty basic breakfasts that I love and can be changed to match your personal preferences.
I love avocado toast, which is such a millennial staple, but it is a very healthy option. The avocado provides lots of vitamins, heart-healthy fats, fiber and antioxidants. I typically use an English muffin or sourdough bread as the base and then spread the avocado on. I sprinkle the avocado with garlic salt and pepper to add some flavor. This is where the personal choice element comes in. Some great additional toppings can be an egg over easy, hot sauce, nuts, and whatever you would like your breakfast to consist of.
Another one of my favorite options is a yogurt parfait. I typically eat Icelandic yogurt because it is high protein, low sugar and, in my opinion, tastes better than Greek yogurt. I like the brands Siggis and Smari as two mainstream options that are relatively common in grocery stores. My favorite fruits to pair with yogurt are raspberries and strawberries, because they add the perfect sweetness and a good texture. I also top mine with an all-natural vanilla granola, but that is again where creativity can be put into use.
