This week has been LONG. I feel like the days are routine and just go by, no major concept to it. I am in my house (aside from going to work) and I am in a slump. But that’s okay! I feel like it’s a time where that happens. It’s February, still winter, I’m always cold and just sometimes want to do absolutely nothing. But, for today, I feel like I haven’t shared a recipe in a while, so I am going to share my current obsession, muffins. YUM. More specifically, apple cinnamon muffins. The good thing about this recipe is that they are oat-based (gluten-free!).
A little backstory, since I was little, gluten has not always been my friend. I actually did go to a doctor about it and for a while, I didn’t eat gluten. And I felt so much better. So over the years, I’ve pretty much stayed off of it. I won’t label myself as fully gluten-free but rather mindful of how much I am eating of it. Luckily I have found really good alternatives! I found gluten-free bread that is SO delicious, I’ve started baking with oat and almond flour. Honestly speaking, I’ve been feeling a lot better about those choices and I want to share them with you!
So again, these muffins, of course, I found them on Pinterest… and they were quick and easy to make. I did make one or two substitutions to my liking because I use a sugar alternative but they still tasted delicious. Also for the ‘oat flour’, you can actually make your own by blending the same amount of oats in a blender (1:1 ratio). For storage wise, these muffins definitely do not keep for more than five days. I haven’t tried putting them into the fridge, but so far I have been keeping them in an air-tight container.
Ingredients:
- 1 3/4 Cup Oat Flour
- 2 Tsp Cinnamon (I eyeball and usually put more)
- 2 Tsp Baking Powder
- 1/2 Tsp. Baking Soda
- 1/2 Tsp. Salt
- 1/2 Cup Coconut Oil (I used Avocado Oil 1:1)
- 1/2 Cup Sugar (1/4 Cup trivia cane sugar)
- 1/2 Cup Unsweetened Applesauce
- 1 Tsp. Vanilla
- 2 Eggs
- 1 Cup Granny Smith apple (only need 1 medium, finely diced)
- 2 Tbsp. Sugar (1 Tbsp. Trivia Cane Sugar – TOPPING)
- 1/4 Tsp. Cinnamon (TOPPING)
Instructions:
Preheat the oven to 350 and either line a baking sheet or spray with non-stick spray. In a small mixing bowl, combine all dry ingredients (flour, cinnamon, baking powder, baking soda, salt). In a large mixing bowl, whisk together sugar, applesauce, and oil. After mixing, whisk in eggs and vanilla. Pour dry ingredients over wet ingredients, stirring as you go until a fully smooth batter appears. Fold in your apple, but be cautious about over-mixing. In a separate bowl, for the topping, mix together the sugar and cinnamon. Pour the muffin batter (I used a scooper – if you have one) evenly into the pan and sprinkle the top of each muffin with the cinnamon/sugar mix. Bake for 15-17 minutes until a toothpick comes out clean. Let cool to allow them to stick together (they can get quite crumbly).
