It has been a crazy couple of weeks. School piled up, work was busy, and I completely fell out of routine and missed posting my new blog last week. But, I posted the same thing on my Instagram that I will say here, that it’s okay to fall out of routine sometimes. We are all human and small blips happen and it’s honestly just as easy to get back on track which is what I did and here I am writing for this week!
I posted this recipe on my Instagram but I wanted to post it again to encourage you to make this DELICIOUS dessert before fall baking turns into holiday baking (just wait for what I have for you guys)!
These gluten-free pumpkin spice donuts are just a simple mix of ingredients and popped in the oven to come out soft and warm and it is such a comfort food for those cold fall nights (or even winter as it’s already November)!
I’ve been saving a lot of Pinterest pins to my “Chef” board and have become super intrigued to try some new recipes and what better way to kick it off than with my first time making donuts!
INGREDIENTS:
- 2 eggs
- 1 cup Almond Flour
- 1/4 cup Pumpkin Puree
- 3 Tbsp Maple Syrup
- 1 Tsp Baking Powder
- 1 Tsp Vanilla Extract
- 1 Tsp Cinnamon (I usually put extra cinnamon because I’m obsessed)
- 1/2 Tsp Pumpkin Pie Spice
DIRECTIONS:
Preheat the oven to 350 degrees Fahrenheit. Using a stand mixer or large bowl, beat the eggs. Add the rest of the ingredients and mix until fully combined (smooth with limited lumps). Prepare a donut pan with cooking spray. Put the batter into the pan, filling about 3/4 of the way. Bake for 20 minutes until a toothpick inserted comes out smooth. Enjoy while warm (this is when they are the best)!
For me, I used a mini donut pan and baked for half the amount of time and they were just as delicious!
I did add an almond butter icing to the top but any topping can add extra sweetness to the donut!
