Thanksgiving. The perfect time of year. Breezy weather. Color-changing leaves. Pumpkins. Family festivities. Fall candles. Turkey. And of course, fall baking.
I am usually the designated baker for all family events so although I did just give a recipe for cinnamon banana bread, here are a couple ideas to add to your delicious Thanksgiving feast!
Apple Crumble – My all-time favorite! Serve warm and paired with a fresh scoop of vanilla and voila! You’ve got yourself a magical dessert! Here’s my simple yet delicious family-made recipe!
Base: Peel and slice 6-7 apples (I would usually pick golden delicious or honey crisp; something with a sweeter taste) and add to a glass rectangular dish. Add 2-3 tablespoons of water and sprinkle with 1/4 cup of sugar and some cinnamon (don’t hesitate with the cinnamon, it’s AMAZING). TIP: Add a small amount of lemon juice for freshness.
Topping: In a separate bowl, using your fingers, combine 1 cup of oatmeal, 1/2 cup of flour, 1/2 cup of brown sugar, and 1/2 cup of butter until crumbly. Sprinkle on top of apples, and at 350, bake for 1 hour. TIP: by adding a little extra brown sugar and butter, the texture and softness of the topping get so much better!
Butter Tarts – Another family favorite and family-made recipe and easily served dessert with the perfect fall taste.
Beat 1 egg and slowly add 3/4 cup of sugar and beat until smooth. Add 2 tablespoons of very softened butter, 1 teaspoon of vanilla, and optional raisins and beat until smooth. Fill pastry made cups 1/4-1/2 full and bake at 350 for 15-20 minutes but DO NOT let bubble!
Pumpkin Scones – Got this recipe from a close friend and it is absolutely DELICIOUS:)
Combine 2 cups of flour with 7 tablespoons of sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of cinnamon and nutmeg and 1/4 teaspoon of cloves and ginger spice. Add 6 tablespoons of softened butter until chunks disappear. In a separate bowl, combine 1/2 cup of pumpkin, 3 tablespoons of milk and 1 egg. Fold into the dry ingredients and form a large dough ball. Pat onto floured surface and roll gently to a thickness of one inch. Cut into 3 inch squares and then cut each square diagonally in half. Spread onto a baking sheet and bake 10-12 minutes at 400 degrees.
Any of these recipes are perfect for a Thanksgiving dessert and will please anyone that tries! I know my family loves it when I bake and it brings me so much joy especially during one of my favorite seasons of the year!
