Alright, as my first recipe post, I have to start off strong, right? So. This is my famous oatmeal chocolate chip cookie recipe. I absolutely LIVE by this recipe. In need of a cozy and warming snack? Make these cookies. Want a bit of food happiness? Then make these cookies. In need of a quick recipe for guests? Then you should absolutely be making these cookies. My oatmeal chocolate chip cookie recipe is perfect for any reason that exists to bake. The touch of cinnamon and the softness of these cookies provide the most humbleness feeling in the world. So follow these really straight forward instructions and you will be as addicted to them as my family is!
Before jumping into making the best cookies in the world, here is a little background on how I came to make this recipe. I had originally been using a recipe that I randomly found online when I realized that I didn’t have enough sugar. Surprisingly enough, I had this alternate stevia sugar in my cupboard that let me tell you made the cookies so much better. Then, of course, I ran out of eggs. Now this was really strange that my family would ever run out of eggs, but we did and I had to find a substitution and ended up with some apple sauce, and wow did the cookies become even softer than I could ever imagine. With some alters to the butter consistency and amount of cinnamon, I ended up with a cookie recipe that will be engraved in my mind for the rest of time. Anyways, I hope you enjoy this recipe as much as I do!

Ingredients:
- 1/2 Cup, Unsalted Butter (Almost Melted)
- 1/4 Cup, Trivia Cane Sugar Blend (or 1/2 Cup, Granulated Sugar)
- 1/2 Cup, Light Brown Sugar
- 1 1/2 Tsp. Vanilla Extract
- 1/4 Cup, Unsweetened Applesauce
- 1/2 Tsp. Baking Soda
- 1/2 Tsp. Baking Powder
- 1/2 Tsp. Salt
- 3/4-1 Tsp. Cinnamon (I usually just eyeball because I love cinnamon and it’s taste!)
- 3/4 Cup, All-Purpose Flour
- 1 1/2 Cup, Quick Oats
- 3/4-1 Cup, Chocolate Chips (The melted chocolate is YUM)
Instructions:
Preheat the Oven to 350°F. Line a baking sheet with parchment paper for best results.
In a large bowl (either using a stand mixer, or for me I use a whisk), beat together the almost melted butter and sugars until light and fluffy. Mix in the applesauce and vanilla, followed by the baking soda, salt, baking powder and cinnamon. Add in the flour, mixing and scraping the sides with a spatula until combined. Add in the rolled oats and fold/combine until all the oats are fully incorporated into the mix. Finally, stir in the chocolate chips until even in the batter.
Using a cookie scooper or a relative sized spoon, scoop the dough onto the prepared baking dish, about 2 inches apart. Bake for 9-11 minutes, or until the cookies are slightly brown on top. Let rest for 4 minutes on the pan and then transfer to a cooling rack. Now, don’t wait too long because the warmer they are, the better!
