HAPPY SUNDAY:)
I haven’t done a recipe blog in a while because I have not had the time at all to bake, which actually makes me sad. Luckily this week is my “Spring/April Break” so I will be able to try out some new recipes!
A while back, I tried to make vegan cookies from an actual recipe rather than substituting to make my own. I’ve always been intrigued to see which ingredients are used to make a recipe vegan and while I don’t usually choose the recipe that says “BEST COOKIES” I decided to just give in and see if it was worth it.
AND IT WAS…
These cookies were warm, chewy, soft, and delicious and I was so happy I chose that recipe.
Ingredients:
- 1/2 Cup Coconut Oil
- 1 1/4 Cup Brown Sugar (I substituted partial coconut sugar)
- 2 Tsp Vanilla
- 1/4 Cup Coconut Milk
- 1/4 Cup Unsweetened Apple Sauce
- 2 1/3 Cup Flour (I used All-Purpose)
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- Chocolate Chips
Instructions:
Preheat the oven to 375 F. Line a baking sheet with parchment paper. Mix the wet ingredients in a medium bowl, mixing until fully combined. Then, in a separate bowl, mix together the dry ingredients. Add the dry ingredients into the wet ingredients and mix until fully combined. Fold in the chocolate chips. Scoop onto baking sheet and bake for 9 minutes until golden brown. ENJOY
