Holiday Baking Series: Part 1

We are finally here! Time for holiday baking (even though I may have started already, whoops). But anyway, I’m doing a little series where I bake different holiday recipes that I think are the ABSOLUTE BEST to give you a little inspo for your plans during the break. I’ve been doing my Pinterest research and let me tell you, there are way too many things I want to bake so I will try and make as many of these as possible because… Christmas is my favorite time of year and it will bring me so much joy getting to share what I love. Also… stay up to date with my Instagram page because this week I am posting a story series with a little holiday gift guide incase you are in need of a little extra inspiration from local businesses!

Back to the series, this week, I am sharing AMAZING gingerbread chocolate stuffed cookies (courtesy of @emilygracefood on Instagram).

I’ve never made this recipe before but let me tell you, I was convinced by the picture within two seconds of coming across the recipe.

All the ingredients and recipe are in the picture above. The only substitution I made was with the date syrup (I have never used it before) so I used a 1:1 ratio of maple syrup.

The cookies were really good! The only thing I would change is the gingerbread spice (made from scratch) because I don’t think I put enough in the cookies. But otherwise, you can taste all of the holiday flavor when it comes to nutmeg and cinnamon and ginger!
