Sunday Soup

I’ve never been the one to ever crave soup. I would eat chicken noodle when I was sick, or when I used to go to Panera, of course, I would have to get the tomato soup, but I was never like “I need soup.” Not until I recently made Chrissy Teigen’s tomato soup recipe. Then I realized how underrated soup is. And here we are, now I am craving it.

I want to share this recipe because it is seriously unlike anything I have ever tasted. My mom made it a couple years ago when we first got her cookbook, but I randomly decided to try it this year, and it totally changed my whole perspective on soup. Once you have made it, it’s perfect for a next-day lunch or dinner, and you can totally change it to your liking. I substituted regular heavy cream with a plant-based alternative, and it tasted just as simple as the perfect tomato soup. And you can even make it vegan by using vegetable broth in the mix.

I’ve been a fan of Chrissy Teigen since I got her cookbook. Her recipes are so delicious and I’ve been making my way, slowly, through her book, trying different recipes and tasting the creativeness in her dishes.

The Ingredients:

  • 3 Tbps. Olive Oil
  • 1 Onion (Diced)
  • 4 Garlic Cloves (Chopped)
  • 1 Can Whole Peeled Tomatoes (Slightly Chopped)
  • 1 Cup Chicken or Vegetable Broth
  • 1/2 Tsp. Sugar
  • Salt and Pepper
  • 1/4 Cup Heavy Cream (I used Soy Milk and Olive Oil, 3:1 ratio) (I know it sounds odd but it made it so creamy)

Instructions:

In a large saucepan, heat the oil slightly and add the chopped onion. Stir consistently for about 10 minutes, until the onion is translucent. Add the garlic and cook for one extra minute. Add the full can of tomatoes (with the juice), broth, sugar, and a little bit of salt and pepper. Bring to a boil and reduce the heat to low. Simmer until some of the liquid is absorbed, about 15 minutes. Let the soup cool for 5 minutes and blend in a blender or processor on high speed for 1-2 minutes, until smooth. Make sure there is a small vent for air to escape. Add the cream or substitute for the cream and blend for just under a minute until combined. Season with more salt and pepper to your preference.
